Traditional ingredients include chicken, pork, fish, goat, the infamous gusano worms and fried grasshoppers, Oaxacan string cheese, beans, corn, pineapple, fresh shellfish from the southern coast and vegetables grown in the Central Valleys. Oaxaca is famous for its thick mole sauce prepared with chocolate and chilies, tasajo, eggs in tomato sauce with epazote leaves, bean chilaquiles, frijolitos con hierba de conejo and chochollotes. If you’re afraid to try something you can’t pronounce, don’t be. Some of the most delicious flavors come from Mexican cuisine.
