Ingredients: 2 cups sugar
2 sticks butter (1 cup), softened
2 eggs
2 teaspoons vanilla
1 teaspoon lemon zest
3 cups All Purpose flour
½ teaspoon salt
2 teaspoon baking powder
1 cup pecans, chopped
3 tablespoons ground cinnamon
Instructions: Preheat oven to 375°F. Beat the butter and sugar together until creamy. Add eggs one at a time. Add vanilla and lemon zest. In a separate bowl combine flour, salt and baking powder. Add to butter mixture and blend well.
In a small bowl, combine 1 cup chopped pecans and 3 tablespoons cinnamon. Roll dough into 1 teaspoon size balls. Then roll in the cinnamon pecan mixture. Bake at 375°F for 10 minutes.
