Ingredients: 8" or 9" premade pie crust, cooled
1/2 cup sugar
1/2 tsp salt
6 Tbsp flour
2 cups milk or cream
2 eggs, beaten
2 tsp vanilla
1 can prepared cherry pie filling
Instructions: In a microwave safe bowl, place the sugar, salt and flour. Whisk in milk. Microwave for 4 minutes. Whisk, microwave repeatedly, stirring every minute or two until the pudding is thick and boiling. Pour some into 2 beaten eggs, return egg mixture to main bowl and whisk. Microwave until bubbling. Cool and add vanilla. Pour into pie crust. Top with can of prepared cherry pie filling. Chill and serve cold.
