Ingredients: 8 medium potatoes (cubed)
2 to 3 tablespoons olive oil
1 to 2 tablespoons fresh chopped garlic
3/4 cup salsa
Salt and pepper to taste
2 tablespoons chopped cilantro
12 large eggs
1/4 cup cream, half & half, or milk
Instructions: In an oven-proof skillet, saute potatoes in olive oil with garlic and salsa. Season with salt, pepper, and cilantro. Beat eggs with cream.
When potatoes are slightly browned, pour egg mixture over potatoes. Bake in oven at 400 degrees for approximately 25 minutes until top is firm.
