Ingredients: 2 cups diced boneless, skinless chicken breast
1 tablespoon olive oil
2 cups diced apples (red or green, about 5 medium)
1/2 cup chopped walnuts
1/2 cup chopped celery
Dressing:
1/2 cup mayonnaise
4 tablespoons honey
3 tablespoons Dijon mustard
Pinch of rosemary
2 large red lettuce leaves
Instructions: Cook the diced chicken in 1 tablespoon of olive oil in a skillet. Let cool.
While chicken cools, combine the mayonnaise, honey, mustard, and rosemary in a small bowl.
In a big bowl, combine cooled chicken, apples, walnuts, and celery.
Fold the mayonnaise mixture into the chicken mixture and chill for 1 hour.
Serve chilled over a red lettuce leaf.
