Potato and Onion Frittata - Print Friendly Page



  
Yield: 4 servings 

Ingredients:
2 baking potatoes-peeled, halved and crossways cut
1 onion-sliced thin
1 tablespoon olive oil
1/4 teaspoon curry powder
1/4 teaspoon ginger
1 1/2 cups eggs

Instructions:
Boil potatoes for 5 minutes. Saute the onions in oil in a cast iron pan or oven proof pan. Add potatoes. Beat together the curry powder, ginger and eggs. Pour the egg mixture over the potatoes. Cook for 5 minutes and transfer to a 6" broiler until top is golden.
