Ingredients: 4 eggs
1/2 melted butter (cooled)
1 L buttermilk
4 cups flour
2 Tbsp sugar
2 tsp salt
2 tsp of baking soda
2 tsp of baking powder
Instructions: Beat the four eggs in a large mixing bowl. Add the butter and one litre of buttermilk and stir gently until eggs, butter and buttermilk are mixed together.
Add remaining ingredients to the buttermilk mixture. Do not stir until all ingredients have been added and then stir gently with a metal spoon until all ingredients are mixed together. The mixture will not be smooth. Allow mixture to stand for half an hour. Cook on a medium to hot griddle, only turning once. Serve immediately.
