Pear Ricotta Tart - Print Friendly Page



Ingredients:
1 pkg yellow cake mix
1 egg
1/3 cup butter, chilled

Cheese Filling:

1 cup ricotta cheese
2 eggs
1/4 cup sugar
2 tbsp cornstarch
1 tsp. vanilla
1 (29 oz) can pear halves, drained
2 tbsp flour
1/4 tsp cinnamon

Instructions:
Grease & flour a 10" springform pan. In a medium bowl, combine cake mix and egg; stir until blended. With a pastry blender, cut in butter. Reserve 1/3 cup crumbs for topping. Press remaining crumbs into bottom and up sides (about 1 inch) of pan.

In a medium bowl combine cheese, eggs, sugar, cornstarch & vanilla; beat until well blended.

Pour filling into pan & arrange pears on top, rounded side up. To reserved crumbs, add flour & cinnamon; toss with fork until blended & sprinkle over pears.

Bake @ 350° for 60-65 minutes until it tests done and the top is golden brown. Cool in pan on wire rack.
