Chloe's Spicy Egg Casserole - Print Friendly Page



Ingredients:
10 eggs
1/2 cup flour
1/2 tsp. salt
1 4-oz. can diced green chilies
1 pt. small curd cottage cheese
1 lb. Monterey jack cheese
1/2 diced red pepper
black pepper to taste
2 tbsp. butter, melted



Instructions:
Beat eggs until light and lemon colored. Add flour and salt to eggs. Mix chilies, cottage cheese, Monterey Jack cheese, red pepper, and butter and add to egg mixture. Add ground black pepper to taste. Blend until fairly smooth. Pour into well-buttered, glass, 9 x 13" baking dish. Bake at 350 degrees for 35-40 minutes. Can be made the day ahead and reheated.
