Baked Blueberry French Toast - Print Friendly Page

Ingredients:
20 ounce loaf "White Wheat" bread
8 ounce cream cheese
1 1/2 cups fresh blueberries
24 well beaten eggs
3/4 cup maple syrup (the real thing)
3 1/2 cups skim milk
1 1/2 cups Half & Half, half milk, half cream

Instructions:
Tear bread into pieces and scatter half of bread into one 12 X 18 pan or two 9"x13" pans which have been coated with cooking spray. Pinch off 1/2" bits of cream cheese and scatter over. Scatter blueberries over and top with remaining bread. Mix eggs, maple syrup, milk, and half and half and pour over. Refrigerate overnight. Bake at 325°F for one hour or until lightly browned. Broil lightly to enhance browning if needed.

Notes:
*Serve with a spicy patty sausage and fresh fruit for a spectacular breakfast for a special occasion.
