Ingredients: In very large bowl mix
4 cups flour
2 ½ cups sugar
4 tsp baking soda
4 tsp cinnamon
1 tsp salt
Stir in:
4 cups grated carrots
1 cup raisins
1 cup chopped walnuts
1 cup shredded coconut
2 grated apples
Instructions: Beat 6 eggs with 2 cups oil and 4 tsp vanilla (in blender). Mix just until combined. Spoon batter into sprayed muffin pan cups, filling to the top. Bake in 350 degree over for 35 minutes for standard sized muffins, about 15 minutes for mini muffins, longer for extra large. Muffins will slightly spring to the touch when they are done, or take one out and break it apart to ensure it’s not doughy. Let cool a few minutes and remove to a wire rack.
