Ingredients: 1 -10 ounces package of frozen spinach
Nutmeg to taste
Pepper to taste
1 can cream of shrimp soup
2 tablespoons milk
4 eggs
Breadcrumbs
Instructions: Cook spinach as directed. Drain well and squeeze out the extra water with paper towels. Add nutmeg and pepper. Blend 1/4 cup of soup with milk. Mix remaining soup with the spinach. Heat in microwave just until warm and stir.
Place spinach evenly in the bottom of four greased 1-cup ramekins. Break an egg into each dish. Sprinkle breadcrumbs over the egg just until coated. Spoon the soup-milk over eggs. Bake at 350°F for 15-20 minutes or until eggs are desired degree of doneness.
