Ingredients: 1 cup uncooked quick or old fashioned oatmeal
1 cup buttermilk
1 egg, slightly beaten
2 tablespoons butter or margarine, melted and cooled
1/4 cup raisins
1/4 cup flour
1 tablespoon sugar
1/2 teaspoon baking powder
1/2 teaspoon soda
1/4 teaspoon cinnamon
dash of salt
1/2 teaspoon butter flavoring
Instructions: Combine rolled oats and buttermilk in a bowl. Cover and refrigerate overnight. Add egg, butter and raisins. Stir just to blend. Sift dry ingredients together and add to first mixture along with butter flavoring. Stir to moisten. If too thick, add a few more tablespoons of buttermilk. Fry as usual for any pancake.
