Ingredients: 3/4 cup mild salsa
1 cup chopped artichoke hearts
1/4 cup grated Parmesan cheese
1 cup shredded Monterey Jack cheese
1 cup shredded sharp cheddar cheese
6 eggs
1- 8 oz carton sour cream
Instructions: Grease a quiche dish and spread salsa evenly over the bottom. Sprinkle chopped artichokes over the salsa; then sprinkle with Parmesan. Top with the Jack and cheddar cheeses. Put eggs in a blender with sour cream and blend until smooth. Pour the egg mixture over the cheeses. Bake uncovered at 350 degrees for about 40-45 minutes. Cut into wedges.
