Ingredients: 2 cups cottage cheese
1 cup shredded cheddar cheese
½ cup shredded Swiss cheese
½ cup grated Asiago cheese
½ cup proscuitto ham (chopped and slightly browned)
½ cup chopped sun-dried tomato
½ cup chopped green pepper
½ cup chopped onion
½ cup flour
1 teaspoon baking soda
½ teaspoon salt
½ teaspoon dried basil
10 eggs
½ cup milk
Instructions: Beat eggs, milk, basil, salt and baking soda until well mixed. Combine remaining ingredients and place in a greased 9 x 13 inch pan. Bake in a pre-heated 350° oven for 45 minutes or until eggs are set.
This dish can be served over hash browns or cooked potatoes. You can also build the casserole the night before cooking and refrigerate until ready to go in the oven. Substitute similar amounts of other vegetables to your taste if you wish.
