Sun-Dried Tomato & Feta Crown Muffins - Print Friendly Page



  
Yield: 6 servings 

Ingredients:
1 1/2 cups of all-purpose flour
2 teaspoons sugar
1 1/2 teaspoons Italian herb seasonings
1 teaspoon baking powder
1/2 teaspoon salt
1/8 teaspoon baking soda
1/2 cup milk
1/4 cup butter, melted
1 egg, slightly beaten
8 sun-dried tomatoes, packed in oil, well-drained, chopped
2 ounces feta, chopped

Instructions:
1. Preheat oven to 400 degrees F.

2. Mix together flour, sugar, Italian seasonings, baking powder, salt and baking soda. Add combined milk, butter, egg, and tomatoes; mix just until dry ingredients are moistened. Gently fold in feta cheese.

3. Fill muffin pan cups about 3/4 full (about 1/4 cup batter). Bake 10-12 minutes or until wooden pick inserted in center comes out clean., Let Muffin Crowns stand a few minutes, remove from pan. Cool on wire rack.

Montrachet chesse can be substituted. We use EKKO Baker's Secret Muffins Crowns muffin pans.
