Ingredients: butter
4 eggs
1 cup flour
1 cup heavy cream
2 Tblsp. milk
4 large red delicious apples, peeled and cored
1/2 cup granulated sugar
Instructions: Preheat oven to 475 degrees. Spray with non-stick cooking spray 6 individual 8" oblong baking dishes. In the bottom of each place 1 tablespoon butter. Set aside. Break the eggs into the top of a blender jar, followed by the flour, cream, and milk. Blend until smooth and set aside.
In a skillet place the granulated sugar in the bottom of the pan. Heat the sugar over medium heat until it dissolves and becomes a caramel brown color. Be careful not to burn. Slice the apples into the carmel sugar. Stir to coat and allow the apples to cook slowly until just tender and carmelized. (The juice from the cooking apples will dilute the caramel). When apples are almost done place the baking dishes in the oven on a baking sheet. Bake 3-4 minutes or until the butter is melted but not browned. Remove from the oven, arrange apple slices down the center of each dish. Spoon over any leftover caramel. Pour batter over the apples until about 2/3 full. Place in the oven (in center rack position) and bake 12 minutes or until puffed and golden. Remove from oven, serve in their individual dishes. Serve alone or with maple syrup.
