Ingredients: 2 strips bacon
2 green onions
3 eggs, seperated
1/2 cup heavy cream
2 oz. swiss cheee
1 cup cooked rice
salt and pepper to taste
Instructions: Cook rice. Let cool while preparing other ingredients. Cut bacon into small piece and fry until crisp. Remove from frying pan and saute chopped green onions (some green part included) in bacon fat until limp. Remove from pan and drain on paper towel with bacon. Beat egg whites until stiff. To slightly beaten egg yolk, add grated swiss cheese, heavy cream, cooked rice, bacon, onion and salt and pepper to taste. Fold in beaten egg white and place in 1 quart souffle dish and bake for 1/2 hour or until set.
