Ingredients: 540 grams dates
1.5 pints boiling water
3 teaspoons baking soda
180 grams butter
540 grams dark brown sugar
3 eggs
1 vanilla bean
540 grams self-raising flour
Instructions: Chop the dates and add to the water and bring to the boil. Add the baking soda and stir in.
Cream the butter and the sugar and then add the eggs slowly beating all the time. Add the scraped vanilla pods and stir in well.
Fold the in the flour and then stir in the date mixture. Cook in a large tray at 350 for about 1 hour.
