Ingredients: 12 eggs beaten
1/2 scant cup flour
1 teaspoon baking powder
4 ounces pepperjack cheese, shredded
6 ounces cheddar cheese shredded
1 16-ounce carton small curd cottage cheese
1 small can chopped green chilies
1/2 cup cream or half & half
Instructions: Mix eggs, flour, baking powder and cream. Stir in cheeses and chilies. Pour into greased 9 x 13 (or 8 x 12) baking dish. Bake at preheated 350 degree oven for 45 minutes or until eggs are set and dish is golden brown. Cut into squares and pass the toppings of sour cream, red salsa and green onions.
Notes: Great for brunch, lunch or light dinner.
