Spinach Cheese Strata

6 slices whole-wheat bread
2 tbsp. Butter, softened
1 cup shredded cheddar cheese
1/2 cup shredded jack cheese
1 1/4 cups milk
6 eggs, slightly beaten
1 pkg. (10 oz.) frozen spinach, thawed and drained and squeezed dry
1/4 tsp. Salt
1/8 tsp. Pepper

Spread bread with butter. Arranged buttered slices in a single layer in greased 9 x 13" baking dish. Sprinkle with cheese. Combine remaining ingredients and pour over bread and cheese. Cover and refrigerate overnight (or at least 6 hours). Bake at 350 degrees about 1 hour or until puffy and golden. Serves 6.
