Baked Omelet with Salsa - Print Friendly Page

Ingredients:
3/4 c. salsa
1/2 c. shredded Monterey Jack cheese
1/2 c. shredded Cheddar cheese
6 eggs
1/2 c. cottage cheese
1/2 c. sour cream

Instructions:
Spray a 9-inch pie pan. Spread Salsa over the bottom of the pie pan. Sprinkle the cheese over the salsa. Combine the eggs, cottage cheese and sour cream. Pour the egg mixture over the cheese. Bake at 350 for 45 minutes.

Notes:
Can be prepared the night before. Remove from refrigerator 1 hour before to bring to room temperature.
