Ingredients: 2 c. flour
2 T. sugar
1 tsp. baking soda
1/2 tsp. salt
2 eggs
1 1/2 c. buttermilk
2 tsp. grated lemon peel
3 T. lemon juice
2 T. melted butter
Instructions: Mix together dry ingredients. Combine eggs, buttermilk, lemon peel and juice. Add to flour mixture and blend. Fold in melted butter. Heat griddle and cook until golden on both sides.
Notes: Serve with real maple syrup or blueberry sauce
