Ingredients: 2 whole oranges
1 cup raisins
1 cup butter
2 tsp. baking powder
1/2 tsp. salt
1 cup orange juice
2 eggs
3 cups flour
2 tsp. baking soda
1 1/2 cup sugar
Instructions: Heat oven to 375 degrees. Combine dry ingredients in a large bowl. Cut off end slices of oranges, cut rest into 1/8ths. In two batches in the food processor, with orange juice - process the oranges until finely chopped. Add raisins, butter, eggs and process. Add to dry ingredients & mix until just moistened. Grease muffin tins and fill 2/3 full with batter. Bake 15-20 minutes.
