Baked Apple Pancake - Print Friendly Page



Ingredients:
2 large green cooking apples, peeled, cored and sliced
2 tsp. ground cinnamon
1/2 cup sugar
1/2 cup brown sugar
2 tbsp. butter
1/4 tsp. salt

Pancake Batter:
6 eggs beaten with a fork
1 cup milk
1 cup flour
2 tsp. sugar
1/4 tsp. salt
3 tbsp. melted butter

Instructions:
Saute apple slices in butter, sugar, brown sugar and cinnamon. Pour into ramekin dishes. Pour batter (will be lumpy) over the apple mixture. Bake at 450 degrees for 18 minutes, reduce to 350 and bake for 10 minutes. No syrup is necessary as the cinnamon brown sugar mixture creates a very tasty syrup baked with the apple juices.
