Ingredients: 1 cup quick cooking grits
1 teaspoon salt
4 cups water
1/4 cup butter
1-1/2 cups shredded cheddar cheese
1 tablespoon grated onion
1 dash Tobasco Sauce
1/4 cup chopped green onion
4 whole eggs, beaten
Instructions: Preheat oven to 350 degrees. In a sauce pan, boil water. Add salt and grits, stirring constantly until thickened. Remove from heat and add butter, cheese, onion, Tobasco and green onion stirring until well blended. Blend eggs into grits. Pour into greased baking dish and bake until firm in the center, about 45 minutes.
Serves 6.
