Russian Cabbage Soup - Print Friendly Page



Ingredients:
1 small head cabbage chopped into 1" pieces
1 onion, chopped
1/2 cup chopped celery
1/2 cup chopped carrot
2 cloves minced garlic
1 bay leaf
1 tomato, chopped
1 lb sausage
1 tablespoon dry dill leaf
3 quarts water or chicken stock
sour cream
salt and pepper to taste


Instructions:
Brown sausage in large sauce pan with onion. Drain off grease. Add cabbage, celery, carrots and garlic. Sweat until tender. Add water (or stock), tomato and bay leaf and bring to boil. Add dry dill. Reduce heat to low, cover and simmer for 45 minutes. Salt and pepper to taste. Serve with a dollop of sour cream on top.

Serves 8.
