Ingredients: 1/2 cup hot chunky salsa
1 cup shredded Jack cheese
1 cup shredded Cheddar cheese
6 eggs
1 (8oz) ctn. sour cream
Instructions: 1. Preheat oven to 350 degrees.
2. Pour the salsa into bottom of greased 10 inch quiche dish.
3. Sprinkle cheeses over salsa.
4. In blender container, combine eggs and sour cream. Blend until smooth
5. Pour egg mixture over cheeses.
6. Bake, uncovered for 30 to 40 minutes or until set.
Notes: This is great served with cornmeal pancakes.
