Ingredients: 3 cups flour
1/4 tsp salt
2 eggs
1 Tbsp baking powder
1 1/2 cups dried cranberries
1/2 cup sugar
1/2 tsp baking soda
3/4 cup buttermilk
3/4 cup butter
2 lemons-grated rind
Instructions: Mix flour and other dry ingredients together. Beat butter until creamy, add sugar and eggs. Beat until fluffy, add dry ingredients then add buttermilk. Fold in cranberries and lemon zest. Mix well. Using an ice cream scoop, place mounds of dough on cookie sheet, brush tops with buttermilk, and sprinkle with sugar.
Bake in hot oven of 350 degrees for 22 minutes.
