Southwest Casserole - Print Friendly Page



  
Yield: 12 servings 

Ingredients:
Spray 9x13 pan with pam.Wisk 8 eggs in large bowl. Add 1/2 cups cottage cheese. Blend in 2 cups biscuit mix. Slowly add 4 cups milk while stirring with wooden spoon. Shred 3 cups cheddar cheese and 1 cup jalapeno jack cheese.

Place shredded cheese in bottom of baking pan. Pour egg mixture over cheese.
Cover and refrigerate overnight. Before baking, sprinkle with cummin and cilantro.

Bake 2 1/2 hours or until knife inserted comes clean.
(I place casserole pan in a larger pan that has 1/2 inch of water in order to bake)

Garnish with fresh sprigs of cilantro and a side of salsa.
