Cornmeal Pancakes - Print Friendly Page



  
Yield: 8 servings 

Ingredients:
2 cups yellow cornmeal
1 cup all-purpose flour
1 Tbsp sugar
1 tsp salt
1 tsp baking soda
1 tsp baking powder
2 cups buttermilk or plain yogurt
1/2 cup milk
1/4 cup vegetable oil
2 large eggs

Instructions:
Mix the dry ingredients together in a large bowl. Add the buttermilk, milk, oil and eggs. Stir until all the ingredients are incorporated. Let sit for 5-10 minutes. Cook on a medium hot grill.

Serve with warm maple syrup or homemade jam. Don't let them float off the plate!
