Ingredients: 6 Tbsp. butter
1/2 cup dry bread crumbs
2 medium onions, chopped
9 eggs, beaten
1/4 tsp. Cayenne pepper
1 tsp. Dry mustard
1 15oz. Can artichoke hearts, drained, quartered (not marinated)
2 1/2 cups cheddar cheese, grated
2 Tbsp. fresh parsley (or 1 Tbsp. dried parsley)
1/2 tsp. Salt
Instructions: Melt butter. Mix half of the butter with the bread crumbs and set aside. Saute onions in the remaining butter. Mix the eggs and spices and beat them. Add artichoke hearts, sauted onions and cheese to egg mixture. Mix gently and pour into greased 9x13" casserole dish. Top with bread crumbs. Bake in preheated oven 325 for 45 minutes - 1 hour or until center is set. Let stand for at least 10 minutes before serving.
This can be made ahead and refrigerated, but don't top with bread crumbs until you are ready to bake.
