Ingredients: Pancakes:
1 egg
1 cup flour
1/2 cup milk
2 tbs melted butter
1/2 cup applesauce
1/2 tsp salt
3 tsp baking powder
Combine all the ingredients, then cook on a griddle. Serve with Apple Cider Sauce. Makes 8 pancakes, serves 2.
Apple Cider Sauce:
1 cup pure apple cider
1/4 to 1/2 cup sugar
1 tbs cornstarch
1/2 tsp cinnamon
1 tbs fresh lemon juice
2 tbs butter
Instructions: Mix all the ingredients, except butter, in a saucepan over moderate heat until mixture thickens. Boil for 1 minute. Remove from heat and stir in the butter. Serve hot over pancakes.
