Ingredients: 2 cubes of butter (not too soft)
1 cup brown sugar
1 cup white sugar
1 egg
dash of baking soda
1-2 teaspoons vanilla
Instructions: This recipe is from Diane Pearson. Unfortunately, she doesn't measure, so all measurements are approximate. The basic recipe comes from an old lady in Duluth, Minnesota (Mrs. Petersen). Diane grew up with the recipe.
Mix all of the above until smooth. Add 2-3 cups of flour to medium dry consistency. Add 1-2 cups of shredded coconut and approximately 1 cup oatmeal. After mixing, add 1/2 of 1 package semisweet chocolate chips.
Cook at 350 degrees for 10-12 minutes. Put cookies on absorbent sheet.
Diane sometimes improvises and uses peanut butter instead of butter.
