TV SERIES LOOKING FOR GREAT HOME COOKS ASKING FOR LANIER'S HELP
Are you known for your amazing chocolate chip cookies or out of this world mac and cheese? A new tv food series for a major network is searching for passionate and animated home cooks famous for their comfort food.
Recipes MUST have a hearty side of personal stories. Is this a family recipe that's been passed down for generations? Are you known in your town as "The Brownie Lady?" Is there a secret ingredient that makes your apple pie legendary? The recipe may be delicious, but YOU'RE the star of the show.
Dishes we're hungry for: pizza, macaroni and cheese, chocolate chip cookies, pies (chicken pot pie to apple), breakfast (sticky buns, pancakes, french toast, and eggs), burgers, bbq, doughnuts, chicken (fried, roasted, soup), chili, chocolate (brownies, hot cocoa), and casseroles.
Candidates must reside in the following areas: New York, New Jersey, Pennsylvania, Connecticut, Illinois, Indiana, Wisconsin, Indiana, Michigan, Iowa, Texas, Louisiana, Mississippi, Arkansas, Virginia, Maryland, and Delaware.

I'm certain each innkeeper is given a magic wand along with
the keys to the inn- for you create magic each and every day for your guests. Staying at a B&B is as close to living
like royalty in a fairy tale as many of us mere mortals will ever achieve. For a few brief moments, we are treated to a
spotless home, luxurious and romantic bedrooms, and fabulous food. And, of course, it is all done effortlessly
- or so it seems.
Cooking and baking is an art- and achieving perfection day in
and day out takes tremendous diligence and attention to detail. Taking the "easy way out" and using a high
quality mix is often a good solution for maintaining consistency and
perfection. When looking for a mix,
start by checking the ingredient list- are all the ingredients listed something
you would choose to add if you were making this from scratch? If the answer is no, then the next question
should be can you find such a mix- OR can you take your recipe and by using some
of the suggestions below, find a way to cut your daily prep time?
Suggestions:
- Do you like to have fresh cookies waiting for your guests
when they check in? Make up your favorite
cookie dough in advance and freeze it into individual cookie size balls. It is then a very simple matter to bake a
few- or several dozen, with only a cookie sheet left to wash. Frozen dough also
sets up well, helps to keep the cookies from flattening out.
- The same concept can work for some scone and biscuit doughs,
and muffin batters. For the scones or biscuits,
make the dough up in advance, adding fruits or anything else you wish, to the
dough. Cut the dough into individual
scones or biscuits, and freeze them flat on a cookie sheet. Bag them, and they are now ready to be baked
"on demand." For muffins- either use a
recipe which allows the batter to be held in the refrigerator for a few days,
or scoop it into the muffin cups and then freeze the batter. If you have the freezer stocked with a
variety of flavors, you can really amaze your guests by offering an assortment
of fresh baked, warm from the oven goodies each morning.

Batters such as pancakes and waffles can be made
the night before and held in the refrigerator.
Stir thoroughly before using, and you can quickly serve fresh waffles or
pancakes (and don't neglect the seasonal pancakes such as pumpkin or
gingerbread!)

What to do with those leftover Halloween pumpkin gourds.
The month of November is a rapid transition from the Halloween hype.
Most of us feel so rushed into a new celebration, we tend to just throw
our October decorations aside and gear up for our Thanksgiving feasts.
However, what about all of those shiny jack-o-lanterns the kids spent
so much time and energy carving? Or, the decorative table centerpiece
on your beautiful Inn table? It's always such a celebratory event
trekking through the pumpkin patch with the intention of nabbing the very
best pumpkin, the one that would make for the best carvings or
decorative appeal. Yet, after all that excitement fades away and our
pumpkins are aging, we tend to just kick them to the curb, or toss them
into our garbage cans or compost piles. There is no sense to let those
perfectly plump pumpkins go to waste!
It is a statistical fact that Americans buy more than one billion
pounds of pumpkins at Halloween, and the vast majority of those end up
in the trash. Lets break this wasteful tradition and start being
resourceful. Pumpkins are a fall favorite and make for the most
scrumptious tasty treats to serve in your cozy B&B.
 These delicious recipes made from your prized pumpkin will delight your
