of the Culinary Institute of America with twenty
five years of experience in the restaurant

Inn for over Fourteen Years. Michael has also
appeared in several top culinary magazines and on
the Food Network's "In Food Today." He takes pride
in bringing standards to the restaurant industry
and to the world of distinctive cuisine.

Trattoria Viviano located three blocks from the
Warwick Valley Bed and Breakfast serving rustic
Italian cuisine which is prepared from fresh
ingredients, using a wood-fired oven combined with
traditional cooking techniques. Italian born and
raised, chef/proprietor Vito Viviano has more than
30 years experience throughout the region, and
developing Zagat® rated restaurants. His rustic
cuisine incorporates the latest trends in healthy
foods and fresh provisions. Each dish, made to
