Ingredients: 5 Tblsp strong coffee or espresso 12 oz. semi-sweet chocolate, coarsely chopped 2 cups sugar 1/2 lb. butter 6 large egg yolks 6 large egg whites 1 cup flour Powdered sugar Instructions: This cake will satisfy any food cravings left after a dinner - Melt chocolate with espresso in a double boiler, stirring until smooth. Scrape into large bowl to cool while preparing rest of cake. In another bowl, cream butter and sugar until light and fluffy. Add egg yolks one at a time, beating well after each. Mix in flour. Beat egg whites to stiff shiny peaks. Carefully fold some of the egg white into the chocolate mixture, then fold in remaining egg white. Carefully fold in the batter mixture. Butter and flour a 9" springform pan. Fill pan with batter and bake at 350 degrees for 60 to 70 minutes or until cake pulls away from sides of pan, top cracks, and middle is still moist. Cool completely. Then remove cake from pan. Sprinkle top with powdered sugar. You may want to use a doily to create a design with the powdered sugar. This is a very rich cake for which you will definitely get compliments and requests. |
