Yield: 9 dozen 

Ingredients:
1 pound Straus Butter, softened
2 1/4 cups granulated sugar
4 eggs
1 teaspoon vanilla
1/2 cup finely chopped almonds
5 1/3 cups sifted all-purpose flour
1/2 teaspoon salt

Cream butter with an electric mixer until light and fluffy. Add the sugar, gradually. In a separate bowl, beat eggs together with vanilla and pour slowly into the dough. Add the chopped almonds. Sift the flour together with the salt and add a little at a time to the dough. When the flour is thoroughly incorporated, form the dough into four balls. Lightly flour the balls and wrap them in waxed paper. Refrigerate for two hours. Use a cookie press to shape the cookies. Bake in a preheated 400 degree oven until golden brown, about 10 minutes.
