Yield: 6 servings 

Ingredients:
6 pears peeled and cored

Poaching Syrup:
1 quart water
1 pound sugar
1 tablespoon lemon zest
1 tablespoon orange zest
1 tablespoon Domaine Carneros Sparkling Wine


Instructions:
Boil all poaching syrup ingredients, add prepared pears and simmer for 20 minutes or until tender.

Cool and wrap in puff pastry.

Refrigerate and egg wash.

Bake at 400 degrees for 15 to 20 minutes or until pastry is golden brown. Serve warm with vanilla ice cream.
