Ingredients: 1 lb. butter, melted 12 oz. sugar 8 eggs 1/2 teaspoon salt Grated zest of 1 lemon 10 oz. cake flour 1/4 oz. baking powder 10 oz. dried cherries 1 cup Piper Sonoma Sparkling Wine 1 cup alambic brandy 10 oz. walnuts 1-1/4 lb. pecans 10 oz. golden raisins 14 oz. glazed pineapple slices, cut up Instructions: Mix together the butter, sugar, salt, and lemon zest. Beat the eggs in one at a time. Mix together the flour and baking powder and add, mixing together until just incorporated. In a small pot, heat the Piper Sonoma Sparkling Wine, brandy, and cherries over a medium flame. Cook until the cherries are plumped and most of the liquid has evaporated. When cool, drain the cherries and add to the batter. Add the reat of the ingredients and put in paper-lined loaf pans. Bake approximately 45 minutes at 350 degrees until the tops are brown and the cake springs back to touch. Notes: Holiday |
