Ingredients: 8 tbs. (1 stick) sweet butter, softened 3/4 cup granulated sugar 2 eggs, separated 2 tbs. orange rind 1 1/2 cups all purpose flour 1 1/2 tsp. baking powder 1/4 tsp. baking soda pinch salt 1/2 cup fresh orange juice 1 cup chopped pecans1. Orange Glaze: 1/4 cup fresh orange juice 1/4 cup granulated sugar Instructions: 1. Preheat oven to 350 degrees. Grease 8 1/2 X 4 1/2 inch loaf pan 2. Cream butter. Add sugar gradually, beating with mixer until light. Beat in egg yolks, one at a time. Add grated orange rind. 3. Sift flour together with baking powder, baking soda and salt. Add dry mixture to batter with 1/2 cup orange juice, beginning and ending with flour. Gently fold in pecans. 4. Beat egg whites until stiff; fold carefully into batter. 5. Pour batter into prepared loaf pan, bake in middle of oven for 50-60 minutes. 6. While baking make glaze. (see below). Spoon hot glaze syrup over bread as soon as the bread is removed from the oven. Cool in the pan on wire rack. Orange Glaze: Combine orange juice and sugar in a small saucepan and simmer gently for 5 minutes, stirring occasionally, until a light syrup forms. |
