Cinnamon Mornings and Chocolate Dreams

Yield: 20 servings 

Ingredients:
1 can (12 oz) Orange juice concentrate
1 1/2 cups Canola oil
1 cup Rice wine vinegar
2 1/2 Tbls Dried Basil
1 1/2 tsp Crushed fresh garlic
3/4 tsp Freshly ground black pepper
2 dashes Tobasco

Instructions:
(Yield 1 lunch salad)
Mixed Salad "Greens: (At least 2 diff. "greens", preferably 3 Bibb, Romaine, Spinach, Radiccio, Boston)

7 sripts sweet red pepper cut into thin strips

1 Scallion Brush cut a 2 1/2 inch piece of scallion, trim off roots leaving 3/4 inch section whole, slice the scallion length-wise creating "branches." Place cut scallion in ice water for several hours until the "branches" open up into a "Flower."

10 sections Mandarin Orange

3 oz Orange Dressing

(Optional) Garnish with: Walnut pieces, course chopped, Fresh Basil, Julienne or Fresh Flowers (Pansy, Violet, or other edible flowers)
