Puffed Apple Pancakes Recipe

Ingredients:
2 tbsp unsalted butter
2 large eggs
6 tbsp all-purpose flour
6 tbsp milk
1/2 Golden Delicious apple, sliced thin and tossed with 2 T firmly packed dark brown sugar and 1 T fresh lemon juice

Instructions:
Maple Syrup as an accompaniment
Divide butter between two 1-cup shallow ovenproof dishes and melt it in a preheated 425 degree F oven. In a bowl combine the eggs, the flour, and the milk and stir the batter until it is just combined. (The batter will be lumpy.) Pour the batter into the dishes, arrange the apple slices in a spoke-like pattern in the center, and bake the pancakes in the 425 degree F oven for 15-20 minutes, or until they are puffed and golden brown. Serve the pancakes with the maple syrup immediately!
