Ingredients: Maple Sauce 2 cups maple syrup 1 11 oz. can mandarin oranges, drained 1 cinnamon stick 2 tbsp orange liqueur Aebelskiver Pancakes 2 cups all-purpose flour 1 tsp baking soda 1 tsp baking powder 1 tsp granulated sugar 1/2 tsp salt 3 egg yolks 2 cups buttermilk 3 egg whites vegetable oil Fresh raspberries, blueberries, pitted sweet cherries, small peeled apple pieces Confectioners sugar garnish Aebelskiver pan Maple Sauce In saucepan, combine syrup, mandarin oranges & cinnamon stick. Warm over medium heat, stirring occasionally. Stir in liqueur. Remove from heat. Cover & keep warm. Instructions: Aebelskiver Pancakes Sift flour, baking powder, baking soda, granulated sugar, and salt into large bowl. Set aside. In medium bowl, whisk egg yolks until well beaten. Gradually whisk in buttermilk until blended. Make a well in center of dry ingredients. Pour in egg- yolk mixture. Mix well. Batter will appear lumpy. Set aside. In small mixer bowl, beat egg whites to still peaks. Gradually fold into batter. Heat Aebelskiber pan over medium heat. Measure 1/2 tsp oil into each cup. Spoon 2 measuring TBSP batter into each hot cup, filling about 3/4 full. Cook until browned & crusty on bottom. Gently press a berry, cherry or small piece of apple in center or each pancake so that the batter completely enclosed the fruit. Turn pancakes over with 2 knitting needles or skewers. Continue cooking until puffed and browned on all sides and skewers inserted in center comes out clean. Total cooking time will be about 6-7 minutes. To serve Arrange pancakes on serving plates. Remove cinnamon stick from maple syrup. Drizzle pancakes with maple syrup and garnish with mandarin oranges and sprinkling of confectioners' sugar. |
