Ingredients: 6 small flour tortillas 1 16-ounce can refried black beans 6 ounces shredded Mexican cheese mixture 12 eggs Butter for cooking eggs Salsa Fresca, see separate recipe Garnish: sliced fruit and a sprig of cilantro Instructions: Preheat oven to 350°F. Spread each tortilla with refried beans and top with a layer of cheese. Lay the tortillas on a baking sheet and heat until the cheese is melted, about 4-5 minutes. While the cheese is melting, either scramble or fry the eggs sunny-side-up, 2 eggs per serving. Set one heated tortilla on a plate. Slide the eggs out of the skillet onto the tortilla. Top with a heaping tablespoon of drained salsa. Garnish with sliced fruit, kiwis and strawberries go well, and a sprig of cilantro. Serve immediately with bacon or sausage. |
