Yield: 2 cups 

Ingredients:
1 pound plum tomatoes cut in quarters
1/2 red onion
1 clove garlic, finely chopped
2 tablespoon fresh lime juice
4 tablespoon fresh cilantro, chopped
1 pickled Jalapeno pepper, seeded and finely chopped
1/4 teaspoon salt
6 dashes hot pepper sauce


Instructions:
Make the day before to allow flavors to blend. Put all ingredients in food processor and pulse until they are coarsely chopped. Drain and sprinkle over eggs in Huevos Rancheros.
