Cinnamon Mornings and Chocolate Dreams

Ingredients:
Blend the following:
1 cup milk
1 cup flour
1 pint low fat cottage cheese
6 eggs
1/2 cup melted butter

Instructions:
Grease an 8 x 8 or 9 x 9 pan. Sprinkle with 1 lb. grated Monterey Jack cheese. Pour egg mixture over and dust with crumbs (I use leftover blended croissant crumbs which adds a nice buttery crunch topping). Bake 45 minutes at 350 degrees. Cut into squares and top with sour cream and fruit conserve or fruit. I double the recipe for the Brook and bake in 9 x 13 pan for 1 hour and 20 minutes. It may be heated in the microwave if you prefer to bake it a day ahead. I reheat about 1 minute per square.

Leftovers make great filling for crepes; rolled over slices about 1 x 3 and it is a blintz! Top with sour cream and conserve or fresh fruit.
