Ingredients: Huevos Santa Fe has black beans and eggs inside a deep fried taco bowl, topped with Jalapeno Jack cheese, baked until bubbly. Taco Bowls Vegetable oil 12 6" corn tortillas Instructions: Add about 5 inches of the oil into a heavy pot. Heat, medium high, to 350 degrees (use a candy thermometer). Press one tortilla in a double tortilla basket (available in gourmet kitchen shops) and submerge in hot oil for about 45 seconds. Cool on paper towels. Repeat for remaining tortillas. Reheat oil to 350 degrees in between tortillas. Can be stored in air-tight containers for up to a week. Black Beans 1 lb. (2 cups) dried black beans 1/2 green pepper, finely chopped in food processor 1/2 red pepper, finely chopped in food processor 1/2 red onion finely chopped in food rocessor 1 Tbsp. Pureed chipolte peppers or to taste (Available in the Mexican section of most markets in 7 oz cans. Puree contents.) 1 Tbsp ground cumin 1 Tbsp chili powder 1 tsp salt Put black beans in a large heavy bot and cover with water. Bring to a boil. Remove from heat, and let sit for about an hour. Add more water if necessary to keep the beans covered. Drain beans, discarding the liquid. Return beans to pot and add just enough water to cover beans. Add remaining ingredients and simmer for about 1 1/2 hours or until the beans are done and most of the liquid has been absorbed. Can be made 3 days ahead, kept covered and refrigerated. Eggs 16 eggs 1/2 cup half and half 1 tsp ground cumin 1 tsp chili powder 1 tsp salt 2 Tbsp butter Mix the eggs, half and half, cumin, chili powder and salt with mixer. Melt butter in a large skillet and loosely scramble eggs. Do not overcook. Assembly 1 lb jalapeno jack cheese, shredded Fill tortilla bowls with some of the eggs on one side and some of the beans on the other side. Top with cheese. Repeat with remaining tortilla bowls. Place on a baking sheet and bake in a preheated 450 degree oven for 10-15 minutes, or until heated through and the cheese is bubbly. Serving Suggestions: Serve with homemade salsa, avocado wedges or guacamole, tomato wedges, jicama (tossed with lime juice), cilantro sprigs and Mexican chorizo sausage. |
