Cinnamon Mornings and Chocolate Dreams

Yield: 15 servings 

Ingredients:
1 lb turkey sausage
1/4 cup olive oil
2 Tbsp chorizo powder
1 tsp oregano
1 tsp salt
1 crushed garlic clove
extra oil
2 tbsp flour
1/2 cup water

Mix the first six ingredients together and form into small balls. Saute them in a couple of tablespoons of oil until just cooked through. Remove to a serving dish. Add the flour to the oil mixture in the pan. Add the water to make a gravey to pour over the chorizo balls.

Tortilla Pancakes

1 cup Masa Harina
1cup all purpose flour
1 cup buttermilk
1 cup milk
2 eggs
1/2 cup oil (Canola Oil preferred)
2 Tbsp sugar
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt

Instructions:
Mix all the dry ingredients together. Beat the eggs and add the milk and buttermilk together then add to the dry ingredients. Let the mixture sit for 10 minutes before using. Pour a large spoonful onto a hot lightly oiled griddle and make pancakes no more than three inches in diameter. Keep warm in the oven and serve with chorizo balls and cilantro butter.

To keep them warm, cover with a paper towel and a lid and hold in a warm oven


Cilantro Butter
1 small bunch of fresh cilantro
1 cup butter or canoa margarine

Chop the cilantro finely and mix well with the softened butter. It can be done easily and quickly in a Cuisinart.
