Cinnamon Mornings and Chocolate Dreams

Yield: 2 dozen 

Ingredients:
1 cup buttermilk baking mix
1 egg
1/2 cup milk
2 medium apples/granny smith, pared & cored



Instructions:
Beat baking mix, egg and milk with rotary beater until smooth. Grease griddle. Cut apples crosswise into 1/8 inch slices. Dip slices into batter. Cook on hot griddle until golden brown, turning once.

Apple Rings with cinnamon and sugar:
Use low heat pan, dip apple rings in batter, put in pan and sprinkle with cinnamon sugar. When brown on one side turn and sprinkle other side with cinnamon sugar. Cook until sugar carmelizes on bottom. Place on plate separately with carmelized side up until slightly cool, carmelized side will stick.
